Doriano crackers 1 packet of Icaro crackers 100 gr of boiled and peeled prawns 100 gr of goat cheese Finely chopped parsley 100 gr of Praga (smoked) ham cut into one slice 50 gr of ricotta cheese 7 cherry tomatoes Small bunch of fresh chives Salt Pepper Oil
Mix the goat cheese with the parsley, add a drop of oil and a bit of pepper, until completely smooth.
Place a spoonful of the goat cheese mixture on half a Doriano cracker and then place a prawn on top. Continue until you have finished the ingredients.
Cut the Praga ham into small cubes, put them in the mixer with a pinch of salt, pepper and a drop of oil. Add the ricotta cheese and continue mixing until creamy.
Wash and cut the cherry tomatoes in half, let them drain for a few minutes.
Spread the ham mousse on the Icaro crackers, place half a tomato on the top and decorate with a few strands of chives.
Place the bruschettas on a plate and serve.
If you like, you can make crab meat mousse. Use crab meat instead of Praga ham and cream instead of ricotta. Blend all the ingredients very well.
